The long-awaited arrival of the MICHELIN Guide marks a recognition of the rapid development in gastronomic culture in Russia over the past 30 years. The unique history and traditions of the region, formed by the variety of high-quality local products from the Far East, the Altai Republic, the Black Sea and the north-west of Russia, inspire talented chefs to create exquisite culinary masterpieces that cannot be found anywhere else. The first ever Moscow MICHELIN Star ceremony took place tonight, at the Zaryadye Concert Hall, in the heart of the Russian capital. The festive evening, organized with all necessary security measures, was attended by more than 500 guests. “ The MICHELIN Guide and Moscow are sharing a historical moment with the unveiling of the MICHELIN Guide Moscow 2022 selection . Inspectors have been particularly seduced by the high-quality local produce. Russia is a wonderfully wide-ranging expression of nature: from sea coasts to wild forests, from aromatic herbs to first-class seafood… There are lots of discoveries to make ” says Gwendal Poullennec, MICHELIN Guide International Director. “ Moreover, thanks to cultural exchanges throughout history between Russia and Europe, Central Asia and the Middle East, gourmets will experience unforgettable authentic meals full of flavor .”

Restaurants were celebrated through the announcement of the MICHELIN Guide selection, with the reveal of Bib Gourmand (for restaurants offering particularly interesting value for money, where you can enjoy a delicious meal under RUB2000), MICHELIN Stars (for restaurants serving high-quality cuisine), and MICHELIN Green Stars (for restaurants that are pioneering in their sustainable approach). As for all its other selections, the MICHELIN Guide has used the same historical methodology. The team of independent and anonymous inspectors from the Guide has been in the field for its traditional table-tests, during which they evaluate the meal they experience via 5 assessment criteria  :

- The quality of the produce used - The mastery of cooking techniques - The mastery of flavors - The chef’s personality in his/her cuisine - The consistency between visits Thanks to the seriousness and depth of their methodology, inspectors were able to collectively build this first MICHELIN Guide Moscow selection.

Beluga – located at the National Hotel, near the Red Square, Beluga offers one of the finest selections of caviar and vodka in the whole of Russia. While experiencing the authentic soul of this historical place, gourmets can discover and enjoy the elegant and delicate cuisine of chef Evgeny Vikentiev. Biologie - Chef Ekaterina Alehina offers her guests a journey through a personal cuisine, with a strong accent on sustainability, focusing on organic products. You can also find the chef’s artistic personality in the restaurant itself, which is decorated with her own paintings and furniture she made herself. Grand Cru – “Bienvenue” to this establishment, with a cozy atmosphere, proposing first class modernized classic French cuisine and one of the best wine lists in Moscow. The Alsatian chef David Hemmerle brings an enjoyable piece of French finesse to Moscow. Sakhalin – Located on the 22nd floor of an imposing building, Alexey Kogay’s cuisine has a pleasant selection of first-class seafood from Russia, including products caught off the namesake island. This elegant and trendy restaurant offers also an impressive view of the city. Savva – Chef Andrei Shmakov knows how to mix classical techniques and modernism to offer a subtle Russian cuisine. The elegance of the restaurant and the high-quality service makes it a not-to-be missed spot for Muscovite gourmets.

15 Bib Gourmand restaurants have also been highlighted, allowing foodies to discover skillful chefs and gourmet offers for less than RUB 2000, such as Hibiki , a little gem led by chef and owner Sang Keun Oh, who proposes beautifully inspired cuisine with dishes of tremendous quality, or Eva , which celebrates Greek cuisine with fresh ingredients, while capturing incredible flavors.

The first MICHELIN Young Chef Award , sponsored by Blancpain, was awarded : Nikita Poderyagin , chef of the Björn restaurant since 2016 knows how to mix perfectionism and emotions in the service of gourmets, and his evolution is to be followed carefully in the future.

Foodies discovered the MICHELIN Service Award , sponsored by San Pellegrino, awarded to the service team of the Twins Garden restaurant, led by Vitaly Filonov. Thanks to the strong commitment of these professionals, foodies are transported on a wonderful journey in the Berezutsky brothers’ culinary universe.

Moscow has become the 35th gastronomic destination chosen by the MICHELIN Guide, along with Singapore, the Nordic countries, Beijing, and California. This international highlight will allow foodies from all over the world to easily find a reason for an unforgettable trip to the Russian capital city and will also create an impetus for the further development of the restaurant business, both in Moscow and other Russian cities.

Artest is located in a two-story 19th-century mansion in central Moscow. On the ground floor is the Chef’s Table (where guests sit at the same table and are personally served dishes from the chef); on the second is a hall with a fireplace. The restaurant, opened only at the beginning of this year by experienced Russian restaurateur Arkady Novikov, takes its name from the first three letters of the given and last names of Artem Estafiev, a young chef from St. Petersburg. Estafiev already has experience of several large restaurants in Russia’s two capitals under his belt, plus internships in Spain and France. Artem uses farm products and creates his own innovations in the restaurant’s “laboratory”, where he makes vinegars from vegetables and berries (carrots, chokeberries, etc.), experiments with Japanese  koji  mushrooms, and keeps products at high temperatures. Since 2017, brothers Ivan and Sergey Berezutsky have been serving creative and hi-tech dishes to guests at their Twins Garden restaurant. In their own laboratory, the chefs combine gastronomy with science: they ferment products, print food with a 3D printer and use freeze drying. Also installed here is a “kinetic farm” with products hanging in the air – symbolizing the 100-hectare farm in the Yaroslavl region from where most of the products are supplied. Part of the farm is located in the forest, so the restaurant always has seasonal berries, herbs and mushrooms at its disposal. The farm also rears goats, cows and poultry, and produces cheeses.

In addition to the main menu, you can order the “Rediscover Russia” set with local products from different regions of the country. The second set meal with the telling name “Vegetables” gives you a taste from the tops to roots. The picture is completed by 14 varieties of wines made from vegetables, mushrooms and herbs (how do you like wine made from tomatoes or boletus?!). The restaurant is famed for its extensive wine list, which is more like a book, featuring over 1,000 labels from all over the world.

Located in the historic building of the Metropol Hotel, a stone’s throw from the Bolshoi Theater and the Kremlin. The menu contains four main “stories” from chef Andrei Shmakov: “Healthy Lifestyle”, “Dacha”, “Farm” and “Russia”, each consisting of four dishes. For example, the “Russia” set tempts diners with duck-and-cherry borsch and muksun with warm potatoes. There is a separate menu section with six types of caviar (served with buckwheat fritters, potatoes, pickled cucumbers or smetana), plus more traditional offerings, including desserts. Andrei Shmakov, who created the menu, joined the Metropol kitchen in 2013, after previous stints in Estonia and St Petersburg, having trained at the legendary Noma in Copenhagen and Chez Dominique in Helsinki.

Under Relentless Russian Assault, Ukraine Adopts a Defensive Crouch

At a high point for Ukraine in its war against Russia, when its army was sweeping Russian forces from the country’s northeast, a small-town police chief proudly hung a Ukrainian flag on his newly liberated city hall.

A year and a half later, the policeman, Oleksiy Kharkivskyi, was dashing into the burning ruins of the same town, Vovchansk , last week to evacuate its few remaining residents as Russian forces closed in.

“Everywhere they come is just razed to the ground,” Mr. Kharkivskyi said of the advance of the Russian troops , who have returned to the region with a scorched-earth ferocity, setting in motion one of the largest displacements of people since the first months of the war.

Russian troops punched across the border between Russia and Ukraine this month and pushed toward Ukraine’s second-largest city, Kharkiv, which has a population of about a million people. Military analysts say Russia lacks the troops to capture the city but could advance to within artillery range, touching off a larger flow of refugees.

Militarily, the incursion seems intended to stretch Ukraine’s already thin and underequipped forces by diverting troops from the Donbas region of eastern Ukraine, still seen as the likely target of a Russian offensive this summer. It has also had the destabilizing effect of sending thousands of dismayed, disheartened people from the border region deeper into Ukraine.

After more than a week of fierce fighting, the Ukrainian Army has fallen back to more heavily fortified positions about five miles from the border, which they have held now for several days. Even more formidable positions — trenches, concrete tank traps and bunkers — lie farther to the rear.

Regional officials say the attack has so far displaced about 8,000 people, and a frantic effort is underway to evacuate stragglers, mostly older people, from towns and villages in the path of the Russian advance.

Many have fled villages that lay in front of the defensive lines, an area given over to skirmishing and ambushes, and heavily bombarded by Russian artillery.

While hardly ideal as a strategy — and accounts from commanders and soldiers suggest Ukraine executed it with some mishaps — the tactic of defending while retreating in small steps allows a weaker force to inflict heavy casualties on attackers. Those on the offensive must storm row after row of positions as they move forward, continually breaking cover and exposing themselves to artillery.

Ukraine, with insufficient troops as a mobilization effort stalled for months and short on ammunition as the U.S. Congress delayed a spending bill, has used the strategy out of necessity after Russian forces took the city of Avdiivka in February.

It comes, of course, at a cost of slices of territory — and of misfortune for those living on the wrong side of the fortifications the Ukrainians will probably fall back on.

Vasily Holoborodko, 65, a retired airplane mechanic, had remained on his farm even as he watched soldiers build tank traps and trenches on the wrong side of his property — away from the Russian border.

When the attack came, he was soon caught in the fighting. Mr. Holoborodko made a dash for safety on Thursday, passing burning houses and blown-up tanks — and the more robust defensive lines.

“We barely got out,” he said. In his rush to flee, he left behind his chickens, his cat and his dog “to whatever God will give them.”

The villages dotted around pine forests north of Kharkiv are picturesque jumbles of brightly painted one-story homes, with gardens freshly planted. The fighting retreat, however militarily sound, has meant surrendering some to ruin.

“The tactics of the Russians have changed radically compared to 2022,” said Capt. Petro Levkovskiy, chief of staff of the operational battalion of Ukraine’s 13th Brigade, referring to the invasion that February. At that time, he noted, “They came in columns, marching to Kharkiv, because they thought they would be welcomed.” Russia occupied the border area until September 2022.

This month, heavy artillery bombardments from across the border in Russia announced the latest attack. “They fire artillery at long distances, destroy everything, then small groups assault, but in large numbers, from different directions,” Captain Levkovskiy said.

On a drive north toward the border from Kharkiv last week, pickup trucks and armored vehicles sped in the same direction, while cars overstuffed with people, bags of clothes and pet carriers raced south.

Wildfires burned through the pines, and smoke rose from burning villages farther north.

Sprays of dirt from fresh artillery strikes spattered the road. The window for evacuating civilians from areas in front of Ukraine’s fortifications is closing.

Scenes of anguish unfolded as people left homes, and sometimes pets, at a moment’s notice.

When an evacuation team arrived at his home in Bilyi Kolodyaz, Pavel Nelup, 30, quickly threw a duffel bag into the car and clambered in as artillery rumbled nearby.

“It’s scarier this time” he said of the latest Russian attacks. “Now we understand they won’t leave anybody alive.”

His German shepherd, left behind for lack of space, stared balefully at him from a gap under the fence, whimpering.

A neighbor, Elena Konovalova, 58, emerged to say goodbye to Mr. Nelup. “My precious, see you later,” she said. “You will be all right.”

Vitaly Kylchik, a chaplain with the 110th Territorial Defense Brigade helping with evacuations, urged her to leave soon, too.

“Don’t sit and wait like the people in Vovchansk,” he said of the town to the north, from where plumes of black smoke were rising. The city hall where the flag was proudly hung after liberation is now a ruin, residents said.

Daria Sorokoletova 40, a resident of Vovchansk, fled on Wednesday. Just as she left her home, an artillery shell hit it, blowing it to smithereens.

“There is nothing there,” she said. “There is nowhere to go back to.”

Even as its citizens are forced to evacuate , the Ukrainian government has defended the strategy of retreating to the defensive lines. Russia has advanced over about 50 square miles and captured about a dozen villages, many now in rubble.

On Friday, President Volodymyr Zelensky of Ukraine said the Russian offensive had reached but not crossed a first line of defenses, beyond those villages.

“The first line is not the border,” Mr. Zelensky said. “It is impossible to build there because our people were getting killed” by artillery fire as they dug fortifications and laid mines, an effort that began in 2022 but intensified in recent months.

A guessing game for the generals awaits. How far Russia advances depends on how many soldiers both sides commit. For Ukraine, that calculation means moving defenders from other potential sites of attack.

“War is interactive,” Johan Norberg, a senior military analyst at Sweden’s Defense Research Agency, said in a telephone interview. “What the Ukrainians do or don't do is just as important as what the Russians do.” Capturing the city of Kharkiv, he said, would require Russia to commit “not just a few thousand but hundreds of thousands” of soldiers.

Residents have less assurances. After Ukraine reclaimed their village, Staryi Saltiv, in 2022, Mykhaylo Voinov, 63, and his wife, Olena Voinova, 54, repaired the roof, plugged shrapnel damage and replaced broken windows. In a lovingly manicured backyard, bird song mixed with the rumble of artillery.

“We live our life to the fullest, even knowing at any time we might have to pack and leave,” Ms. Voinova said. “Of course it’s very hard, but this is our land, we are ready to rebuild again and again.”

In one sign of the exodus, Elena Bubenko, 59, who takes in stray dogs and pets that her neighbors placed in her care before fleeing, is now caring for 116 dogs in the village of Tsykuni, north of Kharkiv.

If Ukrainian troops need to fall back beyond her village, she said, she would understand and just hoped to evacuate the animals in time.

“They should defend their own lives,” not the villages, she said. “Otherwise, who will be left to fight for us?”

Hub 51 closing after 15 years; new cocktail bar, Asian restaurant to take its place

CHICAGO (WLS) -- A popular River North restaurant is closing next month.

Hub 51 has been on Hubbard and Dearborn streets for 15 years.

Lettuce Entertain You is turning the page with two new venues in its place.

"The Dip Inn," a cocktail bar, and an Asian restaurant, "Crying Tiger," will take over the spot.

The Dip Inn is expected to open in late 2024. Its drink menu will be crafted by Kevin Beary, partner and award-winning beverage director of Three Dots and a Dash and The Bamboo Room.

Crying Tiger will be led by chef and partner Thai Dang. It's slated to open in 2025.

It will be designed in collaboration with award-winning interior architecture practice David Collins Studio, who recently designed Tre Dita at the St. Regis Chicago.

Hub 51 is set to close its doors on June 8.

"Thank you to our loyal guests and all of the hardworking people, past and present, that have made Hub 51 such a special place for more than 15 years," the restaurant group said in a statement.

A locally owned and operated seafood restaurant has just debuted its latest location, which is also its first in Sarasota County.

Anna Maria Oyster Bar is now open in North Port at 14132 Tamiami Trail, the former Family Table space. It is the sixth location for AMOB along with restaurants in University Town Center ( which opened last year ), Anna Maria Island's Bridge Street Pier, Cortez Road, Ellenton and "Landside" near Sarasota-Bradenton International Airport. AMOB was founded in 1995 on the Anna Maria City Pier before expanding to its current locations.

As its name suggests, AMOB's menu features a variety of seafood including oysters and fresh fish, along with other casual dining dishes such as burgers and sandwiches. It is also full-liquor and offers a drink menu featuring margaritas and other cocktails.

The North Port AMOB features an indoor-outdoor tiki bar with 56 seats and a shucking station adorned with shimmering fish scale tiles, according to a press release. The restaurant spans more than 7,000 square feet and seats more than 240, with two private rooms: the 32-seat Gulf Room and 20-seat Bay Room.

The restaurant offers an everyday 3-6 p.m. happy hour with deals including $2 raw oysters, $3.99 house margaritas and select drafts, $4.99 well drinks, $5.99 house wines and $6.99 premium beverages. It also offers daily deals such as $17.99 all-you-can-eat fish and chips on Monday, $5 off market price Maine lobster on Tuesday, a Slammin' Salmon dinner duo for $32.99 and 50% off wines on Wednesday, and prime rib night on Thursday.

Oysters Rock Hospitality acquires brand of Kefi Streetside Cafe, which is closing downtown Bradenton location

AMOB is part of the Oysters Rock Hospitality restaurant group, which also bought St. Armands Circle fine-dining staple Cafe L'Europe in 2022 , and now it has been announced it recently added another brand to its portfolio.

Oysters Rock Hospitality has acquired the brand of Kefi Streetside Cafe, which will close its current downtown Bradenton location at 1201 Sixth Ave. W. after a final day of business Saturday, May 25, the cafe shared on social media . Oysters Rock Hospitality executive vice president Eleni Sokos and Jason Simpson opened Kefi Streetside Cafe in 2021 in the former walk-up window space of Tellers, serving Mediterranean-inspired cuisine and coffee.

Kefi Streetside Cafe's next space "will not be very far from our current address," according to its social media post, with plans of being back open this fall.

Red Lobster files for bankruptcy, leaving a dozen NJ locations in limbo, 4 closed

Red Lobster filed for Chapter 11 bankruptcy in Florida on Sunday night, the seafood restaurant chain said in a statement . 

The news follows announcements from a liquidation company that the beleaguered chain, known for its cheddar biscuits and limitless shrimp, had "temporarily" closed 87 locations nationwide, including four in New Jersey. Twelve others remain open in the Garden State, at least for now.

According to Red Lobster's statement, bankruptcy proceedings will allow it to "drive operational improvements, simplify the business through a reduction in locations, and pursue a sale of substantially all of its assets."

The company, founded in 1968 and headquartered in Orlando, said that it would sell its business to a new entity wholly owned and controlled by its lenders. It said its existing "restaurants will remain open and operating as usual during the Chapter 11 process."

Red Lobster posted an $11 million loss in the third quarter last year, driven in part by an all-you-can-eat shrimp promotion, and a $12.5 million loss in the fourth quarter.

These four NJ Red Lobster restaurants have closed

The liquidator, TAGeX Brands announced last Monday that it was auctioning off equipment from 48 Red Lobster restaurants that have closed. Each auction winner was set to receive the "entire contents of the Red Lobster location they bid on," TAGeX said on its website.

There are 16 Red Lobster locations in New Jersey, including the four that shut down. The locations closed include:

Sixty employees are being let go at the Ledgewood location, according to public filings with the state Labor Department. 

"This restructuring is the best path forward for Red Lobster. It allows us to address several financial and operational challenges and emerge stronger and re-focused on our growth," said Jonathan Tibus, the company's CEO, in the statement. 

"The support we've received from our lenders and vendors will help ensure that we can complete the sale process quickly and efficiently while remaining focused on our employees and guests," he added.
